Zucchini Hummus

  • ½ cup almonds, soaked for 1-2 hours
  • ½ cup chopped zucchini
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp olive oil
  • ¼ cup tahini
  • ½ tsp sea salt
  • 1 tsp cumin
  • 1 clove garlic, crushed
  • Pinch of paprika

Method:

Pulse all ingredients in a food processor until smooth. Serve with your favourite raw vegetables or crackers.
