This super smoothie is a crazy delicious combo of goodness that will have you licking your lips in excitement.
It gets a little messy (optional and for effect only) but is a great way to impress your gal pals if they’re around for a healthy breakfast.
It tastes and looks extremely indulgent, yet is ONLY full of nourishing treats.
It’s vegan, gluten-free, sugar-free and paleo friendly.
There are 3 layers which consist of a Coconut Chia pudding; a Turmeric Banana nice cream and a Cacao Coconut Yoghurt swirl. All topped with chopped almonds and generous squeeze of Pic’s smooth peanut butter.
Coconut Chia Layer
4 tbsp chia seeds
200ml Little Island coconut milk
How to: Combine chia seeds and coconut milk together in a jar and shake well. Place in the fridge for 30 minutes or until gel-like and set.
Turmeric Banana Nice Cream
2 frozen bananas
1/2 – 1 tsp Nut Mylk Co turmeric blend powder
1/4 tsp vanilla extract
How to: Place bananas, turmeric and vanilla into a food processor or blender and whizz until fully smooth. Place in the freezer for at least 30 mins (ideally 2 hours) until frozen thick again.
Cacao Coconut Yoghurt Swirl
1 cup coconut yoghurt
1 tbsp raw cacao powder
1 tbsp maple syrup
How to: Mix coconut yoghurt, cacao and maple together in a bowl until well combined. Taste test and add more cacao or sweetener if you prefer.
2 tbsp chopped almonds
1 Pic’s peanut butter slug (2 tbsp smooth PB)
1. Once all the layers have been made and are ready to go, get a large tall glass ready.
2. For the bottom layer, place 2 tbsp chia pudding down, top with a few spoonfuls of the turmeric bananas, followed by the cacao coconut yoghurt. Continue with the layering, finishing off with a hefty dollop of coconut yoghurt and then sprinkling with nuts and the peanut butter.
If you’re making for 2, you’ll need to use smaller glasses to give the overflow effect and to really impress.
