Toasted Almonds with Paprika & Rosemary

Ingredients:

  • 3 Tbsp coconut oil
    2 cups raw almonds
    4 sprigs of rosemary, remove leaves
    2 Tbsp maple syrup
    2 Tbsp smoked paprika
  • 1 tsp flaky sea salt

Method:

Preheat oven to 160 degrees Celsius.

Place a sheet of baking paper on a baking tray and set aside.

Warm the coconut oil in a large pan over medium heat. Once the oil is hot, add the nuts and rosemary and stir until the nuts are well coated. Keep stirring for about 2 minutes, then reduce the heat to low.

Add the maple syrup, smoked paprika and salt, continue to stir for a further minute.

Transfer nuts to the baking paper, spreading them out in a single layer. Roast nuts for 20-25mins.
