Tempeh Tacos

You just can’t beat a good taco and we’ve made a few in our time.  These tempeh tacos are the best vegan tacos EVER! They’re super easy to throw together for a quick taco night dinner any night of the week!

Ingredients: Serves 2

  • Tortillas
  • 1 Avocado
  • 1 Small shallot
  • Juice of 1/2 lemon
  • Salt & pepper
  • 1 tsp olive oil
  • 200gm Organic Tempeh, crumbled
  • 1 tsp ground cumin
  • 1 tsp chilli flakes (optional)
  • 1/2 tsp garlic salt, or minced garlic
  • 1/2 red onion, thinly sliced
  • Fresh coriander
  • Sriracha

How to:

Heat the BBQ for toasting the tortillas, alternatively this can be done in a frying pan.

To prepare the tempeh, heat a frying pan with a dash of olive oil over a medium-high heat.  Place the tempeh in a bowl with the spices.  Once the pan is hot add the tempeh mix and fry until nicely browned.  Remove from the heat.

Mash the avocado with the lemon juice.  Finely dice the shallot and mix into the avocado.  Season to your liking.

Toast the tortillas on the BBQ.  Watch carefully, they can burn easily.

To serve, spread each tortilla with the avocado, top with the tempeh mix then add your toppings.  We love the crunchiness of the red onion, some fresh coriander and of course the sriracha.
