Yep these are simply delicious AND made WITHOUT a food processor.
…So, when your food processor breaks this recipe is for you.
These are so good, I actually had to STOP myself from eating a giant bowl of them for dinner last night plus I know better 🙁
They are the perfect combination of sweet, salty and moist (sorry for those who dislike this word- it’s kind of necessary here…)
Just a note, these will feel really sticky in your hands…this is what you want, once you place in the freezer for a few mins (about 30 minutes), they’ll harden up and then you can store in the fridge.
Lovely, here goes…
~ 8 dried dates – soaked in boiling water (if using Medjool dates- 4-5 would suffice)
~ 1/4 cup almond meal
~ 1/4 cup quick oats (gluten-free if needed)
~ 3 heaped tbsp unhulled tahini
~ 2 heaped tbsp raw cacao powder
~ 1 – 2 tbsp desiccated coconut
~ 1 tbsp raw coconut oil (melted)
~ 1 tbsp raw cacao nibs
~ 1 tbsp goji berries
~ 1 tsp cinnamon
~ 1/2 tsp himalayan pink salt (or whatever’s available)
~ Optional: 1/4 cup sesame seeds for coating the balls in.
~ Let the dates soak in boiling water until soft – and then mash with a fork, until a mushy paste like consistency is formed.
~ In a mixing bowl, mix all dry ingredients: almond meal, oats, cacao, coconut, nibs, gojis, cinnamon and salt.
~ Once combined, mix in tahini, coconut oil and date paste. Mix thoroughly until fully combined and a sticky mixture is formed.
~ Line a container / tray with baking paper (for ease) and carefully take spoonful servings of the mixture and roll into small balls.
~ Place in the freezer for 15 – 30 mins, until set and then keep in fridge.
~ Optional- lick fingers and bowl until clean.
~ Yum Yum.
