Even though we’re nearing closer to Spring here in NZ, the mornings are still chilly enough to enjoy a piping hot bowl of porridge and it’s just so comforting.
Porridge can be done so many ways and definitely doesn’t have to be boring, contrary to popular belief. In fact lately, it’s more of an ‘on trend’ breakfast – it’s totally made a come back.
We love it in our house & like to mix it with a whole lotta super foods to make it a real ‘Super Porridge’.
This serving will make 2 small bowls or 1 giant bowl for a hungry lass (or lad).
Get creative, this one is very adaptable….it’s just porridge after all!
1/2 cup oats
1/2 cup water
1/2 cup coconut milk (or any milk of choice)
2 tbsp raw cacao powder
1 tbsp raw maca powder
1 tbsp shredded coconut
1 tsp chia seeds
1 tsp raw coconut oil
1 large pinch cinnammon
Handful of raw nuts / seeds
1. Combine oats, water and milk into saucepan and cook on a medium heat.
2. Once it starts to combine & heat nicely, add the cacao, maca, chia & coconut oil.
3. If it gets too thick, add a little more water to create the right consistency.
4. Top your hot bowl of porridge with coconut shred, cinnamon, nuts, seeds and whatever else you fancy – (some coconut / greek yoghurt would be delicious & of course any sweeteners you need-honey or maple syrup would be good)
