Summer Nourish Bowl with Beetroot Patties & Vegan Tzatziki

Serves 2 Ingredients:

  • The Cool Gardener Beetroot Patties
  • Favorite salad greens (rocket, spinach)
  • extra virgin olive oil
  • sea salt and freshly cracked pepper
  • 1 cup cooked quinoa
  • 1/2 cucumber, sliced or spiralized
  • 1/2 cup pitted kalamata olives, drained
  • 1 medium tomato, cut into wedges
  • 1/2 red onion, thinly sliced
  • 1 avocado, pitted, peeled and sliced
  • fresh mint leaves
  • pita bread for serving


  • 3/4 cup plain unsweetened non-dairy yogurt (Raglan, Coyo, Cathedral Cove, Good Boost)
  • juice of 1 lemon
  • 3/4 cup diced cucumber
  • 1/4 cup fresh dill, finely chopped
  • 1 garlic clove, minced
  1. Fill bowls or plates with greens. Dress lightly with a drizzle of olive oil and a pinch of sea salt and pepper. Top with cooked quinoa, cucumber, olives, tomatoes, onions, avocado, and mint leaves.
  2. Make the tzatziki by combining everything in a small bowl. Stir together until well-combined.
  3. Cook the Beetroot Patties as per instructions on the packet.  Once cooked, place warm on top of the nourish bowl.
  4. Serve the nourish bowls with tzatziki and pita bread. Dress with a drizzle of your favorite dressing, if desired, salt and pepper, or a dollop of more tzatziki.
