It’s strawberry season! We can’t wait for ‘Pick-your-own’ so we can load up the freezer and make the season last as long as possible. This smoothie is easily doubled as a dessert and will satisfy any sweet craving you have.
1 cup frozen strawberries (10-12)
1 cup unsweetened coconut milk
1 cup ice
1/2 cup coconut yoghurt
2 tsp fresh mint
½ tsp vanilla powder/extract
Add the coconut milk, coconut yoghurt, ice and vanilla to blender and blend until smooth.
Pour 1 cup of mixture into a bowl and set aside in freezer to keep chilled.
Add strawberries and mint leaves to the remaining mixture in the blender and blend until smooth.
To create layer cups, divide the strawberry mixture between two cups and then top with half of the coconut mixture.
Top these with fresh desiccated coconut or coconut chips, chopped mint, freeze dried strawberries and any other fun toppings that tickle your fancy.
