This is the most simple and delicious afternoon delight. If you haven’t cottoned on to ‘nicecream’ yet, you’re in for a treat – it’s basically just frozen bananas blended into a creamy goodness. Perfect for the lactose-intolerant or those who avoid dairy.
On a hot sunny day, as it is here today in Auckland…this nicecream treat is just what you need. Plus it’s made with just 3 simple ingredients and can be whipped up in a matter of minutes.
The only prep you’ll need to do is freeze a bunch of super ripe bananas and make sure your fresh strawberries have been washed well (if not organic) to remove some of those yucky pesticides.
*To do this without ruining your strawbs – simply pop them in a large bowl with water and a cap full of apple cider vinegar. You can leave this for an hour or two, rinse and then return to a container in the fridge.
2 cups chopped frozen banana
1 cup strawberries (green tops removed)
2 – 4 tbsp coconut milk
Optional toppings – cacao nibs, dark chocolate shavings, freeze dried strawberries, passion fruit, coconut chips, goji berries, mint.
- Place the bananas and strawbs into a high speed blender and blend until combining, add the coconut milk to ease the process – add as much as you need to create a smooth consistency – but no more.
- Scoop into a bowl or tall glass and top with your fave goodies and enjoy immediately (before it melts!) Preferably whilst bathing in the sun 😉
