A simple kale salad should be in everyone’s recipe repertoire!
It seems we’re all a little kale mad at the moment, and for good reason!
Kale is absolutely jam packed with vitamins, minerals and antioxidants. The unique combination of nutrients found in kale provide anti-inflammatory and antioxidant benefits, and are highly nourishing, detoxifying and energising.
It’s clear to see that a little kale a day will certainly keep the doctor away!
Large bunch of organic curly kale
1/4 cup flax seed oil
2 tbsp apple cider vinegar
2 tbsp tahini (organic unhulled)
1 lemon (juiced)
1/2 tsp turmeric
1/4 tsp himalayan pink salt
Pinch of cayenne pepper
Tear the kale leaves off the stalks and place into a large mixing bowl.
In a jar add all the dressing ingredients and shake well until all mixed in, add a little hot water if needed for consistency.
Pour over kale leaves and then using your hands, massage the dressing into the leaves (important!).
Cover the bowl and set aside until ready to eat, usually 1 hour is optimal to allow the leaves to soften!
Best eaten on the side of any main meal or as a base of a delicious plant based hearty salad.
