Satay Tofu & Cauliflower Fried Rice

This is cauliflower rice is kicked up several notches by some of my favourite ingredients. Edamame beans, peanuts, coriander, tamari & lemon, make this cauliflower rice a winner.  It’s wonderful low-carb, grain-free, paleo-friendly rice alternative and also a sneaky way to get more veggies into your diet

Cauliflower, while sometimes not as popular as its cruciferous cousin broccoli, offers an array of health benefits. It’s high in antioxidants and vitamin C (providing 73% of your daily vitamin C needs in one cup!). It’s also a known cancer fighter, thanks to its well-studied anti-inflammatory properties.

Serves 2

Ingredients:

  • 1 block firm tofu
  • 1 Tbsp tamari
  • 1 Tbsp olive oil
  • 1 Tbsp maple syrup
  • 1 tsp sriracha
  • 1/2 tsp turmeric
  • 1/2 tsp ground coriander
  • 1 1/2 tsp freshly grated ginger
  • 1 clove garlic, crushed
  • skewers
  • 1/4 of a large cauliflower
  • 1 Tbsp olive oil
  • 2 spring onions, finely sliced
  • 1/2 red capsicum, deseeded and diced
  • 1 small carrot, diced
  • 1/4 cup edamame beans
  • 1/4 cup peanuts, roughly chopped
  • 1 Tbsp tamari
  • 1/4 cup smooth peanut putter
  • 1 Tbsp tamari
  • 1/2 Tbsp lemon juice
  • 1/2 Tbsp maple syrup
  • 1 tsp sriracha

Method:

Drain the tofu and cut into think rectangles.  Place all ingredients for the marinade into a shallow dish and add the tofu strips.  Allow to marinade for at least 1 hour.

Preheat the BBQ or griddle pan and gently skewer each piece of tofu.  While the BBQ heats up, prepare your cauliflower rice.

Cut the cauliflower florets into bite sized pieces and place into a food processor.  Pulse briefly to achieve a rice-like texture.

Heat olive oil in a large fry pan and cook the spring onion, capsicum, carrot & edamame beans for 2 minutes.  Then add the cauliflower and cook for a further 5 minutes over a medium heat.  Add in your tamari and chopped peanuts and once well combined, remove from the heat.

Grill your tofu skewers for 5 min on either side.

Make your satay sauce by adding all the ingredients into a small saucepan.  Mix over a low heat until well combined.

Serve the skewers onto of the fried rice with fresh coriander and a wedge of lemon.
