ROAST CARROT, CAULIFLOWER & MUSTARD SALAD

If you’re searching for one of those satisfying, warming yet healthy recipes then look no further than this warming winter salad that will keep you healthy and out of hibernation all winter long.  

Ingredients:

  • 1/2 head cauliflower
  • 400g baby carrots trimmed
  • 120g mixed greens (we used baby spinach and kale)
  • 1 can lentils drained and rinsed

Marinade

  • 1 tbsp yellow mustard seeds
  • 2 tbsp olive oil
  • 1 tbsp raw honey
  • 1/2 preserved lemon

Dressing

  • 2 tbsp olive oil
  • juice of 1 lemon
  • salt & pepper

Directions:

1  Preheat the oven to 180 Celsius fanbake.

2. Using a mortar & pestle roughly grind the mustard seeds then add the remaining marinade ingredients and grind until well combined.

3. Cut cauliflower into florets and place into a roasting dish with the carrots.  Add the dressing and toss the veggies until well coated.  Roast in the oven for 1 hour until super tender and slightly charred.

4. Mix all the ingredients together for the dressing and pour over the mixed greens.  Really get your hands in there and rub the dressing into the leaves.  Add the drained lentils.

5. When the veggies are done, toss into the mixed green and lentils and serve immediately.
