Maple Chia Layer Pudding

This delicious pudding is the perfect sweet treat for those hot summer nights. It can be made with any flavour of Matakana Superfoods Organic Maple Water depending on your palate’s preference. The maple water has a very delicate sweet flavour and is extremely high in electrolytes, helping your body rehydrate throughout the summer. In this recipe, we chose to use a combination of fresh and dried cherries to give the Pure Maple Water flavour a punchy contrast.

Maple Chia Layer PuddingIngredients

1 cup Matakana Superfoods Organic Maple Water

1/2 cup raw cashews (soaked in water)

2 tbsp chia seeds

2 tbsp maple syrup

1/2 tsp vanilla extract

Fruit* – fresh cherries, fresh mango or fresh berries.

1. Drain the cashews and place in a blender with the Maple Water. Blend until smooth and then add the chia seeds, maple and vanilla, blending until well combined.

2. Pour mixture into a bowl and place in the fridge to set for 2 hours.

3. Roughly chop your fruit of choice, then take a glass and scoop half the chia pudding into the glass and top with a layer of fruit, followed by the remaining chia pudding. Top with a final layer of fruit and an extra drizzle of maple syrup.

*Depending on which flavour of Maple Water you are using, choose the appropriate fruit to complement.
