Raw Vegan Chocolate Twix Bites

These raw vegan ‘Twix’ bites are the perfect combination of sweet, chewy and decadent.

All ingredients featured are gluten free, dairy free, refined sugar free, wholesome and non-processed.

These are the perfect afternoon or after-dinner treat when those sweet cravings creep in, because we all know they do!

Please note that this is a fiddly and sticky recipe, so you’ll need to have a little patience- but the extra time put in is well worth it.

Raw Vegan Chocolate Twix Bites

Ingredients:

Biscuit Layer

1/2 cup raw cashews

1/2 cup almond meal

3 tbsp coconut flour

2 tbsp coconut nectar (or sweetener of choice)

3 tbsp coconut oil

1/4 tsp vanilla extract

1 pinch of salt

Caramel Layer

3/4 cup dates (soaked)

1/2 cup raw almond butter

2 tbsp coconut nectar (or sweetener of choice)

1/4 tsp vanilla extract

1 pinch of salt

Raw Chocolate

1/2 cup cacao

3 tbsp cacao butter (melted)

3 tbsp coconut oil

2 tbsp coconut nectar (or sweetener of choice)

1 pinch of salt

Raw Vegan Chocolate Twix Bites

Directions:

1. Biscuit Layer – Throw the cashews into a food processor until a smooth crumb is formed. Then mix together cashew crumb, almond meal, coconut flour, coconut oil, vanilla and salt until well mixed. Get a flat cake tin and line with baking paper. Place the biscuit mix into the tin and press down firmly with fingers or the back of a spoon. Place in the freezer (30 mins).

2. Caramel Layer – Place the soaked dates, almond butter, coconut nectar, vanilla and salt into a food processor and blend until a smooth silky mixture is formed. Pour this on top of the biscuit layer (out of the freezer) and use the back of a spoon to push it out to corners (this can be tricky, so be patient). Place in the freezer for 1 – 2 hours until almost solid.

3. Chocolate – Melt the cacao butter in a double boiler (bowl on top of simmering hot water). Add the coconut oil, coconut nectar and salt and mix together until silky smooth.

4. For the final touch, remove the slab of biscuit/caramel from the freezer and using a hot knife slice into small (bite-sized) cubes or the shape of your choice. Using a fork – pierce each cube and dip into the chocolate until well-covered. Have a pre-lined tray ready and return the chocolate covered morsels to this tray. Repeat and continue until all bites are well covered.

5. Return all bites to the fridge until the chocolate is set and then dig in!
