Pistachio, Goji & Choc Balls

If you’re looking for a Christmas-y feeling bliss ball that all the crew will love, these balls may just be the ones.  They’re not JUST another bliss ball as they’ve got different layers of flavour & texture..

I added small pieces of my favourite chocolate (‘Green&Blacks’ Organic 85% Cacao), because it’s Christmas (and it tastes amazing), but you can always leave that out if you’re wanting them to be super clean.

These would be a perfect gift for your mum, your sister, your gal pal or your nana…You’ll WOW them, enjoy…

Ingredients:

~ 1 cup almond meal

~ 1 cup pitted dates (soaked in hot water for 15 mins)

~ 1 cup raw pistachios (shelled)

~ 3 tbsp goji berries (soaked in warm water for about 15 mins)

~ 3 tbsp dessicated coconut

~ 1/2 tsp cinnamon

~ 1/4 tsp salt (himalayan pink salt)

~ Approx 8 pieces of (85%) dark chocolate chopped into tiny pieces. (optional)

How to:

~ Blend 3/4 cup pistachios in a food processor until fairly crumb like – a few chunky pieces will be fine here.

~ Mix almond meal, ground pistachios, coconut, cinnamon & salt together.

~ Meanwhile, whizz the soaked & softened dates to make a paste, then add to the mixing bowl.

~ Mix together (well) using a spoon, then add the whole softened goji berries and dark chocolate pieces. You can use your hands to mix this together, the heat from your hands brings out the stickiness and it will all bind together nicely.

~ Take spoonfuls of the mixture and roll into small balls, place on a board.

~ Grind the remaining 1/4 cup pistachios & a few goji berries until a finer powder is made. Roll the balls in this powder and then place (freshly rolled) balls into the fridge.

~ These will keep for a couple of days outside of the fridge; for a couple of weeks inside the fridge or a couple of months in the freezer.
