Orange, Feta & Beetroot Salad

Despite only containing a handful of ingredients this Orange, Feta & Beetroot Salad offers so much in flavour and texture 🍊  It pops all the more with a salty olive vinaigrette and chunks of creamy feta.
4 x medium beets
1 x tablespoon olive oil
4 x cups Spinach
2 x Oranges
1/4 cup red onion, finely sliced
2 x medium oranges, finally slice, removed from skin
1/2 cup crumbed feta
1/4 cup roasted almonds
salt & pepper
3 x tablespoons balsamic vinegar
2 x teaspoons dijon mustard
2 x teaspoons grated orange zest
1 x teaspoon honey
1/3 cup olive oil
salt & pepper
Preparation of Vinaigrette:
Whisk honey, orange zest, mustard and vinegar in small bowl.
Gradually whisk in oil.
Season with salt & pepper.
Preparation of Salad:
Preheat oven to 200 Celsius.
Toss beets and oil in large bowl, sprinkle with salt & pepper and roast in the oven until tender.
Place spinach and onion in large bowl, toss with vinaigrette.
Add beets to bowl.
Serve on 4 plates, arrange beets atop spinach, top with orange and sprinkle with cheese / walnuts.
