with vegan feta

per bowl:
- 1x wrap of your choice
- 3-4x The Cool Gardener Mediterranean Falafel
- Mixed salad greens
- Diced tomato, cucumber and red onion
- Hummus
- Tofu Feta (recipe below)
- Chilli flakes, salt, pepper + fresh lemon to season
Vegan feta
- 100g firm tofu
- 1 tsp dried basil
- 1 tsp dried oregano
- 2 tsp lemon juice
- 1 tsp apple cider vinegar
- 2 tsp extra virgin olive oil
- 1 tbsp nutritional yeast
- black pepper
this mix over the tofu and massage it into the crumbled tofu. Sit in the fridge while you prepare
your bowls.
Preheat oven to 180C. Press each wrap into a tortilla bowl tin and bake for 8-10 mins until
crispy and lightly golden. Remove from oven and place falafel on a tray. Bake as per box
instructions for 10-12 mins. Meanwhile, rinse and toss your salad leaves, dice your tomato,
cucumber and red onion. Assemble into bowls. Place baked falafel on top, add a big dollop of
hummus, sprinkle over plenty of tofu feta and season with salt, pepper, chili flakes and fresh
lemon to taste.
