These juicy lemony coconut balls are simply de-lish and will taste excellent when paired with a large cup of green tea…
The ingredients used are so simple and you’re likely to have a few on hand in your pantry.
There is something SO appealing about little balls of goodness. There are endless options of flavour combinations and when you hit a good one, it can be heavenly.
The walnuts in these make them satisfying and fulfilling, the coconut oil adds the creaminess and the lemons add the tangy refreshing twist. Feel free to add more of anything or even double the recipe to store for later.
These keep great in the fridge (for 7 – 10 days) or freezer (3-4 weeks).
1 cup raw walnuts
1/2 cup raw almonds
1/2 cup coconut shred
2 tbsp sunflower seeds
6 dried dates (softened in hot water)
3 tbsp rolled oats
1 tbsp raw coconut oil (melted)
1/2 fresh lemon juice + rind (optional)
1 large pinch cinnamon
~ Combine all dry ingredients (nuts, coconut, seeds, oats & cinnamon) in food processor until smooth-ish mixture appears.
~ Scrape sides of food processor and then begin adding in the wet ingredients – dates, coconut oil and lemon juice (and rind).
~ Keep mixing until all combines smoothly. Have a taste & adjust accordingly (if it’s too dry, add a little warm water or more coconut oil).
~ Once ready, scoop out mixture with damp (clean) hands and roll into little balls.
~ Place these in the fridge for an hour or 2 prior to eating to allow all the goodness in flavour to present itself.
