Healthiest Banana Bread

The Healthiest Banana Bread you ever did taste.

This recipe is DELICIOUS.

It’s a recipe adapted from the ‘I Quit Sugar’ team and is just delightful.  I made a few tweaks and adapted to what ingredients I had on hand and it turned out really (really) good.

I’m no banana bread ‘connoisseur’, I would usually pass on it due to it’s HIGH sugar content.  But not this one, this recipe includes some good healthy fats, protein and slow-release carbs. So can be considered a pretty ‘good’ treat.



~ 1/2 cup buckwheat flour (or spelt if not GF)

~ 1/2 cup almond meal

~ 1 heaped teaspoon baking soda

~ 1 heaped teaspoon cinnamon

~ 1 teaspoon organic coconut sugar

~ 1/2 teaspoon himalayan rock salt

~ 4 – 5 dried dates chopped roughly

~ 1 tablespoon cacao nibs

~ 1 tablespoon raw sunflower seeds (for the top of loaf)


~ 3 large very ripe bananas

~ 2 free-range eggs (could use chia gel here if vegan)

~ 3 tablespoons raw coconut oil (melted)

~ 3 tablespoons milk (of your choice- cows, almond, coconut)

~ 1 tablespoon raw apple cider vinegar

How to:

~ Heat the oven to 180’C on fan bake.

~ Throw all dry ingredients  (except sunflower seeds) into a large mixing bowl and stir together.

~ In a separate bowl, whisk together eggs, coconut oil, milk and vinegar.  Then add the bananas and roughly mash these through as you mix (not tooo smooth).

~ Add the wet ingredients to the dry and fold through until fully mixed.

~ Pour mixture into a lined loaf tin.  Sprinkle the top with sunflower seeds and extra cinnamon.

~ Place in bottom tray of oven and leave to cook for about 50 minutes or until a knife comes out clean.

~ Once ready, take out from oven and leave to cool for at least 30 minutes before devouring.

~ Delicious on its own or spread with some coconut oil, butter or lashings of peanut butter.

~ YUM and healthy.

*Warning: Avoid baking this unless you have others around to help you eat it. Otherwise you’ll realize you and your partner have devoured a loaf between the two of you in two days.  Not as hard as it sounds, in fact a very easy and delicious feat.  But probably not recommended.
