The combination of roasted hazelnuts and rich raw cacao is a match made in heaven.
These little truffles are exactly that. They have a silky chocolate case covering a sweet soft hazelnut-y centre. These can be made in little truffle cases as pictured or simply rolled into balls and dipped in chocolate.
You can be rest assured these are a decadent and satisfying healthy treat…made with SIMPLE ingredients and made super easy to whip up when you’re in a hurry.
These are naturally gluten free, dairy free, refined sugar free and taste blumin’ delicious !
155g hazelnuts – raw (about 1 cup)
8 medjool dates – softened in warm water
4 tbsp coconut oil
4 tbsp raw cacao powder + 1 tbsp raw cacao
2 tbsp coconut nectar (sweetener of choice)
1/4 tsp salt
How to make ’em:
- Throw the hazelnuts into an oven heated at 180 degrees bake – cook for about 10 minutes or until the skins begin to brown and curl. Once done – pull them out, throw them in clean tea towel and rub until most of the skins begin to fall off.
- Pop the hazelnuts into a food processor or blender and whizz until ground down. Remove these and set them into a bowl. Add the softened dates with a little water to the food processor, blend until smooth and paste-like. Mix the hazelnuts, dates, 1 tbsp cacao and a pinch of salt together to form a thick dough.
- Melt the coconut oil by gently heating it in a double boiler (one bowl over a hot bowl of water). Once melted, stir in the sweetener, cacao powder & a good pinch of salt. Taste the chocolate mix to make sure it’s sweet enough for you.
- When making in a truffle case – Place 1 tsp of raw chocolate into the base of case, roll the dough into small balls and pop into the case and then cover with remaining chocolate. When making in a ball shape –Roll the balls into bit sized pieces and then dip them in the chocolate, set aside to cool and then double dip them in the chocolate for an extra coating. You may need to make extra chocolate for this step.
