Greenleaf Organics GLO Roasted Root Vegetable Salad

  • 1 bag of rocket
  • 6 radish cut in half
    6 brussel sprouts cut in half
  • 1 parsnip sliced
  • 1 beetroot sliced
  • ½ red onion sliced
  • 4 garlic bulbs
  • 2 stems of thyme
  • 2 stems of rosemary
  • bunch of mint
  • 100g of goats feta cheese (if you are diary free the coconut yoghurt labne below is a great option)
  • 1/2 cup of walnuts


Roast all vegetables with garlic, thyme and rosemary, cook for 30 min on 180 degrees. Once vegetables have cooled mix into the rocket and mint then top with feta and walnuts.


  • 50mls of lemon SWITCHEL shake to wake ‘The Mother’
  • 50mls of olive oil
  • 2 tsp of yellow mustard
  • pinch of salt
  • crack of pepper

Mix and pour over salad, serve with your choice of side.

Coconut yoghurt labne

  • 1 cup of coconut yoghurt
  • 1 lemon
  • 1 tsp salt


mix salt and lemon zest into the coconut yoghurt, place into a cheese cloth that is sitting in a strainer over a bowl, wrap the top of the cheese cloth then pace in the fridge over night. Once the liquid has drained you can open the cheese cloth and you will have a thick cheese like consistency, put directly on top of salad.
