
Serves 2:
- 1/2 packet of Ceres Organics Fritter Mix
- Oil of choice for frying
- 2 cloves garlic, crushed
- 1/2 cup Organic vegetable stock
- 1 Tbsp olive oil
- 1 Tbsp coconut oil or butter substitute
- 1 cup of peas, defrosted
- 1/2 cup mint leaves
- Zest of half a lemon
- Salt & pepper to taste
To Serve:
- Tomato chutney
- Ceres Organics Egg-Free Mayo
Mix and cook fritters as per packet instructions (enough for 2 x fritters each).
In a saucepan heat a dash of oil and cook the garlic until slightly browned. Add all of the vegetable stock, salt, pepper and simmer over a low heat for 5 minutes.
Whisk in the coconut oil or butter substitute and remove from the heat.
Fold through the peas until well coated. Allow to sit for 5 minutes then fold through the mint and lemon zest. Make sure you don’t add the mint when the peas are too hot.
Pile onto a plate, top with the fritters and plenty of tomato chutney & mayo. Serve immediately.
