First thing’s first, we are super obsessed with the Super Seedy Bread mix from the GoodFor store… It’s packed with so many seeds and an abundance of fibre, making it perfect for a good old fashioned avo smash. Unfortunately it is not avo season (the struggle is real) so we have been forced to get creative and have discovered the next best thing, Edamame Smash! Super delicious, super green, super nutritious, what more could you ask for?!
1 cup edamame beans
50g feta cheese (optional)
1/2 lemon, juiced
1/4 cup fresh mint
Pinch of chili flakes
Salt and pepper
To serve: Your choice of gluten-free bread (we love the Super Seedy Bread mix from GoodFor (grab yours here!), sprouts, chili flakes, poached egg (optional).
1. Using a food processor, blend the edamame, feta, lemon juice, mint, chili flakes and salt and pepper until combined but still a little chunky.
2. Spoon onto your toasted bread and top with extra chili flakes, a squeeze of lemon, sprouts or more mint and a poached egg (optional). Enjoy!
