Easy Chilli Bean Stuffed Sweet Potato

This tasty meal is ideal for when you are running low on time/motivation but still want to be nourishing your body with the best food you can. Not only is it heart, warming and nourishing, it is also fully vegan, super affordable and filling.

Ingredients

Stuffed Sweet Potato:

1 orange sweet potato

1 can Ceres Organics Black Chilli Beans

1/4 red onion

1 bunch fresh coriander

1 tbsp olive oil

1 tsp salt

Squeeze of lime juice

Cashew Cheese:

1/2 cup cashews, soaked for at least 1 hour and drained

1/4 cup water

1 lemon, juiced

1 tbsp nutritional yeast

1/2 tsp salt

Directions

Stuffed Sweet Potato:

1. Heat oven to 180C.

2. Slice the sweet potato in half, rub in olive oil and salt, place on a baking tray and bake in oven for 1 hour.

3. Once sweet potato is cooked, remove from oven and use a spoon to scrape some of the potato out to make room for the beans.

4. Heat the chilli beans in a pot and pop half into each of the potato halves.

5. Top with sliced red onion, coriander, a squeeze of lime and a generous dollop of cashew cheese!

Cashew Cheese:

1. Drain the soaked cashew nuts and add the water, lemon juice, nutritional yeast and salt to the food processor. Process until smooth and creamy.
