Let us introduce you to a fresh new take on the regular basil pesto, this time with our favourite herb… Coriander! This Coriander Pesto is rich in flavour and the perfect texture for spreading generously on a thick piece of sourdough or your favourite rice cracker. One of our personal favourites is a combo of pesto, avo and tomato on gluten-free toast. Delicious and perfect as a slightly heavier snack or even a quick meal option!
2 large handfuls fresh coriander
1/4 cup extra virgin olive oil
1 handful raw cashews
2 cloves garlic
1 tbsp apple cider vinegar
1 pinch sea salt
1 pinch black pepper
1. Place cashews in a pan and turn the heat up to medium. Dry toast until cashews turn golden brown and the oils are released.
2. Place all ingredients, including toasted cashews, into a food processor and blend until well combined and slightly chunky.
3. Scoop out and store in your favourite jar or serve immediately with warm bread. Mmm…
