Chia Puddings are such a great start to the day, a wonderful snack mid-afternoon if you’re getting sugar cravings…they also make a great dessert, depending how sweet you make it.
Very simple, but super delicious.

In short, they’re a wonderful source of protein, fibre, omega 3s and hydration.
~ 3 tbsp chia seeds
~ 1 cup unsweetened coconut milk (could also use water)
~ 2 tbsp coconut yoghurt (I like Raglan Coconut Yoghurt)
~ 1 tbsp desiccated coconut
~ 1/4 tsp vanilla essence
~ 1 – 2 ripe nectarines (chopped)
~ 2 tbsp chopped dark chocolate
~ 2 tbsp Ceres Organics coconut smiles (crumbled)
~ In a glass jar or small bowl combine the chia seeds, milk, yoghurt, vanilla and coconut and stir vigorously or shake (if in the jar). Pop into the fridge for 10 minutes until it starts to set and then give another stir or shake to smooth out any lumps. Return to the fridge for another 30 mins or so – you could also leave overnight.
~ Once set and ready, spoon into 2 serving glasses, and begin to stir in half the chopped nectarines.
~ Add the remaining nectarine, dark chocolate & coconut on top and enjoy!
