This bowl of fresh and tasty goodness is the perfect summertime brekkie. Made with rich coconut milk and sprinkled with chia seeds, it’s filled with enough healthy fats and omega 3’s to keep you full and satisfied all day long. The berries help to cut through the creaminess and give it a delish summery flavour.
1 cup rolled oats
1/4 cup chia seeds
1 cup berries (fresh or frozen)
3/4 cup Ceres Organics Coconut Milk
1/2 cup water (or coconut water for extra sweetness)
1 tsp ground cinnamon
3 tbsp chopped nuts (raw almonds, walnuts, cashews)
2-3 tbsp coconut yoghurt
1 tbsp maple syrup (for extra sweetness)
1. Combine oats, chia seeds, berries, coconut milk, water, cinnamon and nuts in a bowl or jar, and mix until all combined.
2. Cover and place in the fridge for a couple of hours or ideally overnight.
3. To serve, top with a dollop of coconut yoghurt, sprinkle a few extra berries and drizzle with the maple syrup. Yum!
