Chocolate Protein Balls

These will become a staple in your household for those times when you need a little something delicious, sweet and satisfying.

They make a great post-workout snack or mid-afternoon sweet-craving-satisfier.

They’re also super easy to make with just a few ingredients that you’ll most likely have hidden in your pantry somewhere.

Feel free to use any protein powder, I like to use NuZest’s Clean Lean protein– as it’s a plant-based pea protein and is easy for me to digest, but you may have a different preference.

You’ll need:

~ 3/4 cup medjool dates (OR 1 cup dried dates softened in water)

~ 3/4 cup raw almonds

~ 3/4 cup raw sunflower seeds

~ 1 scoop NuZest clean lean protein (Rich Chocolate)

~ 1 tbsp raw coconut oil

~ 1 tbsp raw cacao powder

~ Pinch of pink salt

~ 1/4 tsp cinnamon

~ Optional: 3 tbsp shredded or desiccated coconut (for rolling in)

~ Optional: 1 tbsp of hot water or coconut oil to bind mixture.

How To:

~ If you have a solid food processor, you can pop all the ingredients in together and blend until combined.

~ Alternatively, go in stages.  Firstly whizz the dates into a paste, remove and place in a bowl.

~ Whizz the almonds and sunflower seeds into a crumb, add to the bowl with dates.

~ Then add all remaining ingredients to the bowl and start to mix – adding a little extra water or coconut oil if needed. Use your hands to make a firm paste.

~ Take spoonfuls of the mixture and roll into bite sized balls, then roll in the desiccated coconut.

~ Pop these in the fridge for an hour before eating and then enjoy for up to a week (if kept in the fridge) or 2-3 weeks (if kept in the freezer).
