Choc Dipped Balls

Chocolate dipped anything is pretty special.

These balls are great for entertaining- who doesn’t love a choc-dipped morsel ?

Or if you’re wanting to give homemade gifts this year – anyone would be STOKED to receive a cute jar of healthy & homemade treats.

Nothing says LOVE more than homemade goodness.

I use ‘Green & Blacks Organic Dark Chocolate – 85%’ (because it’s my absolute favourite) but a 70% based dark chocolate would also work.

I’ve used a couple of my favourite summer fruits for the inside (strawberries and mangos), but you could swap out with your favourite stone fruit or berry. I imagine peaches or blueberries would also work deliciously.

Lots of finger-licking goodness in the kitchen to be had.

First up…

Mango, Coconut & Cashew Balls dipped in Dark Choco.

Ingredients:

~ 1 large cup desiccated coconut (or coconut chips ground up)

~ 1 large handful of raw cashews (soaked in water for 2 hours)

~ 5 – 6 large pieces of organic dried mango (softened in hot water for 15 mins )

~ 3 tbsp coconut oil (room temp – soft)

How to:

~ Throw the cashews in the food processor until a chunky crumb is formed, remove and add to a bowl with the shredded coconut.

~ Throw the mango pieces into the food processor and mix until in tiny pieces.

NOTE: You could also use fresh mango and blend into the smooth pulp.

~ Mix everything together using your hands to create a smooth thick mixture.

~ Firmly roll into small balls and place into the fridge for an hour or two.

~ Meanwhile, melt the dark chocolate over a double boiler (One bowl sitting inside a larger bowl filled with warm simmering water).

~ Once the choc is melted, grab the balls and carefully (using a bit of patience & skill) lavishly coat each ball and return back to a tray lined with baking paper.

~ Once all coated, return the tray to the fridge and wait until they set.

Voila – YUM.

Next up (the favourite in my house)….

Strawberry & Cashew Coconut Balls dipped in Dark Choco.

Ingredients:

~ 1 cup raw cashews (soaked in water 2 hours)

~ 5-6 fresh clean strawberries

~ 2 tbsp rolled oats (ground down to a flour)

~ 2 tbsp desiccated coconut

~ 1 tbsp coconut cream

How to:

~ Throw the raw cashews in the food processor and whiz until a chunky crumb is formed.

~ Mash or blend the strawberries to make a smooth pulp.

~ In a bowl combine the ground cashews, ground oats, coconut and coconut cream – mix together and then add the strawberry pulp and mix together well (you can use your hands to mix well).

~ Firmly roll the mixture into small balls and place into the fridge for an hour.

~ Meanwhile, melt the dark chocolate over a double boiler (One bowl sitting inside a larger bowl filled with warm simmering water).

~ Once the choc is melted, grab the balls and carefully (using a bit of patience & skill) lavishly coat each ball and return back to a tray lined with baking paper.

~ Once all coated, return the tray to the fridge and wait until they set.

Yep, DELICIOUSNESS all around.
