Chia Mousse Pots

Serves : 1-2 people

Prep time: 10 mins

Setting time: 1hr or overnight

1 cup coconut milk
1/4 cup chia seeds
1 serving of Macro Mike protein powder 1 tsp maple syrup

2/3 cup frozen strawberries 1 tbsp chia seeds
1 tbsp water

Your choice of toppings – cacao nibs, berries, banana, yogurt, granola etc.

In a bowl add in the coconut milk and protein powder. Whisk together until fully combined. Add in the chia seeds and maple syrup. Mix until combined. Cover and pop in the fridge for an hour or overnight.

Once set, transfer chia mix into a high powdered blender and blitz until a smooth mousse forms. Transfer into jars to serve, pop back into the fridge and make the berry topping.

Defrost your strawberries by leaving them out to thaw or pop them in the microwave for 30 seconds. Add in 1 tbsp of chia seeds and water. Stir until chia seeds are mixed in. Allow the chia seeds to set for 5 mins before transferring to a blender. Blend strawberry chia mixture until smooth.

Spoon berry mix on top of the mousse pots and top with cacao nibs or berries.
