Chia Pudding Layer
1 cup coconut milk
3 tbsp chia seeds
1/2 cup Greek or coconut yoghurt
1/2 cup blueberries, defrosted or fresh
1 tbsp toasted coconut chips
1. Prepare the chia pudding by combining the chia seeds and coconut milk in a jar and refrigerate for at least an hour.
2. Once the chia pudding has reached a gel-like consistency, prepare your parfait by simply layering the components in a glass, starting with chia pudding then topping it with the crumbled Blue Dinosaur bar. Next add the Greek or coconut yoghurt and finally, top with blueberries and toasted coconut chips.
3. Serve immediately or keep refrigerated (the layers may begin to run into each other after some time).
