Apple, Date & Cinnamon Muffins

This season is a wonderful time to enjoy the flavours of fresh crispy apples and warming spices like cinnamon and nutmeg in a muffin…

Autumn has a comforting feel to it, it’s all about wrapping up to stay cosy, early nights in, reading more and indulging in delicious hot drinks.

These muffins are lovely in the afternoon with a hot cuppa, or they also work as a nutritious breakfast if you’re on the go- you’ll just need to lather on some almond butter and you’ll be away with a full and nutritious belly and heart.

This recipe is gluten-free, dairy-free and refined sugar-free so can be enjoyed by most, it could be made vegan by substituting the eggs to 2 chia eggs (2 tbsp chia & 6 tbsp water)…just note the chia version will be more dense and may need a little longer cooking.

Ingredients:

1 cup almond meal

1 cup oat flour (grind oats in a food processor)

2 sweet apples (peeled and grated)

1 ripe banana (mashed)

1/2 cup almond milk

3/4 cup chopped dates

3 tbsp coconut oil (melted)

2 eggs (organic / free range)

1 tsp apple cider vinegar

1 tsp baking soda

1 tsp baking powder

1 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp vanilla extract

Pinch of salt

How to:

~ Turn the oven on to Bake 180 degrees celcius.

~ Mix the flours, baking powder & spices together in a mixing bowl.

~ Whip the eggs together, then add the mashed banana, apple, dates, milk, coconut oil and combine- add to the dry mix.

~ In a small cup add the baking soda to the vinegar- watch it foam – fun!

~ Pour into the mixing bowl and fold all together.

~ Once fully combined…grab a greased muffin tin and using a spoon, fill the holes 3/4 full.

~ Optional to top the muffins with small apple or date pieces, then pop the tray in the oven to bake for about 30 – 40 minutes….may need longer depending on your oven!

~ Take out once ready and let cool for 15 minutes, remove muffins and let cool further on the cooling tray (If you can resist!).

~ Otherwise enjoy while warm, with a lathering of your favourite spread, nut butter or jam or just as they are…De-lish!
