Coconut Butter is a delightful addition to your pantry! Most of us are familiar with coconut oil and its nourishing properties, making it our go-to fat source. But this month we’re ALL about the coconut butter; not only does it contain the same nourishing fats (keeping it anti-viral and anti-bacterial), it also contains fibre and other essential minerals. Just one tablespoon of coconut butter can provide up to 2g of fibre as well as small amounts of potassium, magnesium and iron.
Coconut butter is used a little differently to oil, so read up below to see our favourite 8 ways to enjoy it! Remember coconut butter is still an energy-dense food and should be enjoyed sparingly as a delicious treat. 1. Straight from the jar
Probably the most obvious choice because once you taste this sweet nectar you’ll see why this is our number 1 option! It’s easy and super nourishing, so a small spoonful will really satisfy any sweet craving (which is right up our alley!).
2. Spread it on toast
Spread this goodness over a steamy and crunchy piece of toast, this can be enjoyed as is or topped with some banana or strawberry slices. Delicious!
3. Drizzle over fruit
Chop up a bowl of your favourite fruits (think banana, strawberries, mango…) and then melt down the coconut butter so it’s a runny liquid. Drizzle the coco butter over your fruit and enjoy!
4. Eat with dark chocolate
Spread your coconut butter over a couple of squares of dark chocolate and then enjoy the melting texture in your mouth. The sweetness in the butter will offset the bitterness of the dark chocolate. The perfect combo!
5. Drizzle over your breakfast bowl
If you’re a fan of granola, fruit and yoghurt in the morning, you will love this little addition. Simply melt down the coconut butter and drizzle over your bowl of goodness. This will add a generous dose of healthy fats that will keep you satiated all morning.
6. Pop a spoonful in your smoothie
Adding a spoonful to your green or fruity morning smoothie is a great way to add extra creaminess and sweetness, as well as a hefty dose of good fat and fibre.
7. Add a spoonful to a spicy curry
… Or any savoury dish to sweeten and add creaminess. It’s the perfect way to round off a curry that is tasting a little too bitter or spicy.
8. Use in baking and raw treats
If a recipe is calling for a nut butter (like almond or cashew) you can substitute with coconut butter instead. Or if you’re making raw truffles or bliss balls, you can use coconut butter instead of coconut oil to create an extra creamy texture.
