Oat, spelt & carrot porridge by Vudu Café + Larder

Oat, spelt & carrot porridge with grilled pineapple, coconut sugar, sunflower walnut crumb, lemon coconut whip & bee pollen

Ingredients.

  • Oats
  • Spelt (cooked)
  • Rice malt syrup
  • Ginger
  • Cinnamon
  • Nutmeg
  • Vanilla paste
  • ½ Grated carrot
  • Juice of ½ carrot

Add the rolled oats, spices and rice malt syrup and soak overnight. Add the cooked spelt to the oat mix, stir to combine. Add the grated carrot & juice & splash of water. Cook gently, stirring frequently with a wooden spoon, for about 8 minutes until the porridge is lovely, thick and creamy.

Top with dehydrated pineapple,coconut lemon whip, sunflower walnut crumb & bee pollen and serve with coconut sugar.

Sunflower walnut crumb.

  • Sunflower seeds
  • Pumpkin seeds
  • Walnuts (crushed)
  • Coconut oil
  • Maple syrup
  • Mixed spice (pinch)
  • Mix together, place on a baking tray and cook until golden & crunchy.
