Grilled Asparagus & Cherry Tomato Tabbouleh – Relishes Cafe

Here at I AM Co. one of our favourite things to do is enjoy visiting the great cafes around the country. We’re so spoilt to have such an amazing range of cafes serving some hugely delicious, healthy food from a wide variety of cultures. Relishes is a Wanaka lakefront icon. A relaxed sunny café by day and an atmospheric candlelit restaurant by night. Their brunches are legendary, our lunches and dinners divine.  For 30 years Relishes has created modern New Zealand cuisine from the wild and wonderful ingredients at their door.  Owned and run by local team, Paul, Tasha & Toby who have a passion for Wanaka, food and service.


  • 400g Faro
    1.25 litre vegetable stock
    1 tsp salt
    1 tsp Baharat Spice
  • 50g Italian parsley, finely chopped
    1/4 cup chopped mint
    Zest and juice of 1 lemon
  • 2 Tbsp Olive Oil
  • Cherry tomatos halved
  • Blueberries
  • Sliced cucumber
  • Grilled asparagus
  • Boil faro with stock, salt and baharat spice until cooked.

When cooked spread onto tray, mix in lemon juice, olive oil, parsley, mint, lemon zest and season.  Cool in the fridge.  Add other tomatoes, berries, cucumber & asparagus just before serving.

Black Garlic Hummus

1 cup of cooked chickpeas, rinsed
1 1/2 tsp ground cumin
3 x black garlic cloves
35ml olive oil
1/2 Tbls tahini
15ml lemon juice
Salt and pepper

Blend all ingredients in robo until smooth
Then slowly pour on hot water to achieve desired consistency (so can spread nicely on the plate).  Check seasoning and adjust.

Beetroot Tzatziki

1 Large beetroot
1 x confit garlic cloves
100g of yoghurt
1 tsp lemon juice
25ml olive oil
10g coriander stalks and tops
5g Italian parsley
Salt and pepper

Wrap beetroot in foil each with a good pinch of salt
Roast in hot oven for 45min or until tender
Remove skins and grate on box grater, put in muslin or blue cloth to strain, squeeze out excess juice.
Blitz strained beetroot, garlic, yoghurt until smooth
Add lemon juice, coriander, parsley and olive oil season and taste

Arrange tzatziki, hummus and faro salad on a plate and enjoy.
