Chicken and Winter Grains by The Parkhouse

Here at I AM Co. one of our favourite things to do is enjoy visiting the great cafes around the country. We’re so spoilt to have such an amazing range of cafes serving some hugely delicious, healthy food from a wide variety of cultures. Some of these cafes have been generous enough to share some of our favourites with you….

The Parkhouse serves relaxed fare in family-friendly surrounds. Having completely gutted and redecorated the standalone ivory villa, the multifaceted space features a light-filled loggia with a beautifully tiled concrete floor, and an interior characterised by wicker basket lights and generous tables around which to share delicious dishes that are at once elevated and simple.

50g cooked wild rice
130g cooked freekeh
1 Tbsp chopped almonds
1 Tbsp chopped herbs (mint, parsley, coriander)
1/2 Tbsp currants
1/2 chicken breast poached in coconut cream
Combine the above ingredients carefully in a serving plate.


1 lime zested and juiced
1/2 tsp white balsamic
1/2 tsp sherry vinegar
1/4 tsp palm sugar or brown sugar
2 Tbsp olive oil
Salt and pepper

Combine all of the dressing ingredients in a small bowl then mix gently through dish ingredients, serve and enjoy!
