ACAI CHIA PORRIDGE from Willow Cafe

Here at I AM Co. one of our favourite things to do is enjoy visiting the great cafes around the country. We’re so spoilt to have such an amazing range of cafes serving some hugely delicious, healthy food from a wide variety of cultures. Some of these cafes have been generous enough to share some of our favourites with you….

This super delicious, healthy recipe is kindly shared with us from Tony and Gibb, owners of Willow Cafe in Albany, Auckland. Tony and Gibb believe food is more than just something to fill an empty stomach. To them, food is about ensuring a balance of taste sensation and health. They use fresh ingredients, most of which are organic, and prepare many of their items from scratch.

Ingredients:

1.5 cups porridge oats
1 cup water
1 cup organic milk
1 Tbsp chia seeds
1/4 cup shredded coconut
1/2 mashed banana
2 tsp açai powder

Method:

1. Put the oats in a saucepan, pour in the milk. water, chia seed, shredded coconut and sprinkle in a pinch of salt.
2. Bring to the boil and simmer for 4-5 minuets
3. Add mashed banana and açai powder, stirring from time to time and watching carefully that it doesn’t stick to the bottom of the pan till the texture thickens as your desire.
4. To serve. Pour into bowls topped with seasonal fruit.
