This week we catch up with social media sensation Simone Anderson, face of “Simone’s Journey To Health”.

Having struggled with her weight for many years, Simone made a decision to change for good. In 2014, using social media purely to keep her accountable, she posted her first photo. Simone shared everything candidly and as her weight decreased, her followers increased. With her massive 92kg weight loss, her fan base across Facebook and Instagram exceeded 500,000.

It didn’t take long for her story to gain media attention, with extensive coverage both nationally and internationally, including publications like The Huffington Post, The Daily Mail, Elite Daily, Fashion Quarterly, NZ Herald and TVNZ to name just a few. In 2015, Simone was interviewed live by Tyra Banks on her talk show, The FABlife. She also graced the October 2016 cover of Good Health magazine.

Your go-to brekkie is…

Always a protein shake, without fail. I am not a massive breakfast eater and never have been so I find a protein shake super easy to handle in the morning. 1 frozen banana, a splash of milk, water and my protein powder. Blend away and I am ready to go even if I am pushed for time.

Your go-to lunch is…

An omelette. Once again it’s quick and easy and packed full of protein. I throw some eggs, a splash of water and whatever random veges I have in my fridge then quickly pan fry for a few minutes and am ready to go.

Your go-to dinner is…

Oooooo this is a tough one. I have so many delicious dinners I reach for! But coming into the summer months I love my fresh rice paper wraps. I like to fill them with chicken or prawns then fresh seasonal veges. They are light and tasty!

Not always but if I do I love Greek yogurt and fresh fruit!

What you reach for when a snack attack hits…

My mum’s protein bars! They are so tasty, packed full of protein and really fill you up. Available on my website!

Anything Asian or Asian fusion! Mekong Baby is one of my favourites.

Three foods you can’t live without…

Chocolate (of course), fresh seafood and fruit!

Your ultimate foodie indulgence…

If the hangover is bad enough then a couple of pieces of fried chicken is my go-to!

The recipe that’ll always get you drooling is…

Jamie Oliver’s Chicken Laksa. If you have not tried this you have not lived!
