We’re obsessed with hearing about what other people eat all day everyday and we just know that you’re all as curious as we are! There’s something so intriguing about knowing the secrets of a healthy foodie. Follow along with this series where we find out what a wide range of successful health-loving ladies eat in a day.

This week we chat with the beautiful Roz McIntosh, Nutrition & Lifestyle Coach. Roz is a Registered Nurse and mama to two children aged 7 and 9. She has a down to earth, wholefoods approach to health, using simple, sustainable strategies to facilitate real change in peoples lives. Her specialty areas include weight loss, digestive health and fatigue. She helps clients discover a way of eating to suit their unique biology and lifestyle. She also has a blog where she shares delicious wholefood recipes and enjoys photographing and styling the food in a way that makes it very appealing to her audience.

Your go-to brekkie is…

During the week I will often just have a coconut cream Matcha Latte with a little added collagen powder. I’ve never been a huge breakfast eater and prefer to have a really good lunch and dinner. But on the weekends, I’ll go for poached eggs and wilted greens with a slice of really good quality bread like Oh My Goodness Bakery loaf from the Hawkes Bay – my fave!

Your go-to lunch is…

Left-overs usually. I find to stay on track and not get ravenous by 3-4pm, I need to always have a decent lunch and I try to make enough dinner the night before to have for lunch the next day. It usually consists of a big plate of fresh and cooked veggies, some nuts and seeds or chicken/salmon and some homemade dressing or mayo and sauerkraut on the side.

Your go-to dinner is…

Lots of veggies again, and BBQ meat or fish. We keep it pretty simple in our family because my kids don’t like food to be too “mixed up” so us adults add variation by adding flavoursome dressings, nuts and seeds, pickles and spicy sauces. I do love a good curry!

Dessert or no dessert…

Not usually during the week, but on the weekends if I have more time I will usually make something sweet with whatever seasonal fruit is available. We love free form tarts and crumbles with coconut ice cream or yogurt.

What you reach for when a snack attack hits…

Nuts and fruit usually or a cup of tea and a sit down. Sometimes I find when I get cravings it is because I’m thirsty or tired. I also love smoothies.

Your fave foodie destination…

I loved our recent trip to the Hawkes Bay. So much gorgeous fresh produce available and a plethora of artisan food producers. The Hastings Farmers Market, Hapi (Napier), Chantal Organics (Napier), Mr D (Napier), too many to name. NZ Foodie heaven!
