There’s something so intriguing about knowing the secrets of a healthy foodie. Follow along with this series where we find out what a wide range of successful health-loving ladies eat in a day.

This week we chat to the humorous Rachelle Becker, Brand Manager in the Ceres Organics marketing team. You’ll find her creative fingerprints scattered throughout their marketing material and products (especially their Salted Caramel Cashew Clusters). After finding out she had Multiple Sclerosis last year, her food and lifestyle choices have had a huge overhaul, which seems to be working a dairy-free treat.

 

  1. Your go-to brekkie is…

Always warm lemon water first thing – RIP teeth. Then I’m usually super hungry at work, especially if I’ve been to the gym, so two breakfasts are called for. My dosha requires warmth apparently, so first breakfast is porridge with some grated apple or berries and a bit (a lot) of fancy paleo cereal scattered on top. Second breakfast is a nutrient-dense green smoothie; kale or spinach, coconut milk, Kiwi Crush, hemp protein (don’t tell the government), spirulina, health health, etc etc. Oh and omega 3 supplements it’s all bloody go first thing!

Your go-to lunch is…

Well, a lot of research shows a plant-based, wholefood diet works wonders for MS. As a result I’ve started eating vegan five days a week. A year ago I would have thought this was totally ridiculous but it’s amazing how quickly your mindset can change when you strike a health issue. Annnnnyway vegan days are usually homemade soup chocca with veges and some lentils or a gluten free grain. On meat-eating days it’s a sexy salad and some protein; organic chicken or beef. #foodprep #freezer #jarsalads #youvechangedrachelle

Your go-to dinner is…

Again heaps of veggies and either some gluten free carbs or quality protein. Sounds boring but I’m forever finding recipes and thinking of new dishes. The kitchen is my happy place (apart from when my GF has been cooking, then it’s a nightmare bombsite). I started physically writing keepers in an actual recipe book as I hate cooking off my phone – it’s very annoying when you have the tiniest residue on your thumb and it won’t unlock. It’s just coconut oil Siri, please let me live my best life!

Dessert or no dessert…

I live for dark chocolate. The new Whittakers 82% is pretty great for the price. If it’s close to payday Pana will usually fall into the shopping basket. And if I’m really letting lose on the sugar strings I’ll have some Little Island mint choc coconut ice cream.

What you reach for when a snack attack hits…

I’m trying this new thing where I don’t snack between meals as I was getting out of control – like, my workmates legit wondered if I might have worms. I find I’m much more productive too, as previously I was constantly thinking about the next snack, now it’s a much simpler time. Fortunately-unfortunately at work we have a marvellous supply of rice cakes and nut butters, so if I’m really despo I’ll slather up one of those. And a plethora of tea! I just discovered Mayan Man cacao husk tea, they look like some cool dudes from Wellington (my hometown) so I’m keen to support them in my addiction.

Your fave foodie destination…

Restaurant wise: La Vietnamese Kitchen, Odettes, Gemmayze St. Country wise: Vietnam – Every. Single. Dish. There. Was. Amazing. One day we walked past a warehouse full of huge sacks of MSG, I suspect that may have something to do with it…

Three foods you can’t live without…

Dark Chocolate. Full stop. Amen. Ginger, sweet or savoury, so versatile, so delish. Broccoli, it just pairs beautifully with any savoury meal.

The flavoured hot chocolates at Elizabeth in Kingsland – do yourself a favour and go there right now.

The recipe that’ll always get you drooling is…

Saan’s wok seared chicken thigh with rice noodles and house Siracha. Also if someone could make gluten-free bao that would be much appreciated. Peace out and thanks for reading!
