This week we catch up with the super beautiful and talented Olivia Scott, founder and director of The Raw Kitchen.

As founder & director of one of the country’s most recognised raw food businesses, The Raw Kitchen, Olivia is hugely passionate about the effect of what we eat has on our bodies. Olivia is also a keen yogi, loves immersing herself in nature and all things natural, and has a passion for sharing her knowledge, energy and love with her community. Olivia is a sought-after speaker at various wellness events and has written for and published recipes in several publications, including her amazing first book, The Raw Kitchen, published by Beatnik Publishing and launched nationwide in April 2016.

Your go-to breakie is…

There are pretty much 3 on rotation;

1. (If I want something light and quick) My smoothie is always the same thing – 2 handfuls of kale, cacao powder, maca powder, vanilla pea protein powder, almonds or almond butter, ice, filtered water.

2) (When I’m hungry) Bircher muesli – Into a bowl I throw oats, pumpkin seeds, walnuts, almonds, flaxseed, LSA, protein powder, vanilla bean, frozen berries, and coconut yoghurt and mix with hot water.

3) Omelette with kale, sauerkraut and avocado.

The Raw Kitchen BreakfastYour go-to lunch is…

Either leftovers from the night before (roast veges or salad) and I add in some leafy greens, sauerkraut and avocado. If I am in a rush I have avocado on seed loaf or the same omelette as above.

Your go-to dinner is…

At the moment my absolute favourite thing is a medley of all my favourite roast veges; brussel sprouts, cauliflower, Jerusalem artichoke, red onions, garlic and kale with some pan-fried tempeh. If I have time, I will make a green soup with roasted green veges, miso, coconut milk, turmeric, spices and a dash of apple cider vinegar.

Green SoupDessert or no dessert?

Every night I have a hot cacao with raw cacao powder, vanilla bean and a pinch of stevia. This usually satisfies my sweet tooth.

Chocolate ChamomileWhat you reach for when a snack attack hits…

Either nuts, coconut yoghurt, or tempeh.

Your fave foodie destination…

I have quite a few! I used to love going to Were Bros when they were open. Now it is either Masu at SkyCity, True Food, Amano or Odettes.

3 foods you can’t live without…

Raw cacao, brussel sprouts, cauliflower, avocado (sorry I know that’s 4 – they are all equal!).

The recipe that’ll always get you drooling is…

Anything from Ottolenghi’s book Nopi, my favourite chef. I visited his café in London last year and it was incredible!
