We’re obsessed with hearing about what other people eat all day erryday and we just know that you’re all as curious as we are! There’s something so intriguing about knowing the secrets of a healthy foodie. Follow along with this series where we find out what a wide range of successful health-loving ladies eat in a day.

This week we chat to the lovely and talented Nicky Skinner, paediatric emergency nurse, nutritionist & health coach, and Mama to Hope Lily.

Nicky is a paediatric emergency nurse, health coach and business owner who has a passion for holistic health and wellness, and loves to create real food recipes to make healthy eating easy. She lives in Auckland with her husband and brand new daughter (3 weeks old), Hope Lily. She loves working with kids and enjoys the fast-paced nature of the emergency environment but also has a heart for using her nursing skills in developing countries with those who don’t have access to healthcare. She loves to help her coaching clients achieve their health and wellness goals, whether that’s improving the nutrient density of their diet, weight management, increasing energy levels or working on stress management techniques.

With her husband, Nicky runs an online business selling bento lunch boxes and drinkware, and uses this website to share her real food, (sugar-free, grain-free) recipes. She also has a brand new personal health coaching website coming really soon… Watch this space!

Your go-to brekkie is…

A green smoothie with plenty of avocado, frozen zucchini, spinach, 1/2 frozen banana, protein powder (or collagen) and almond butter with some added coconut kefir for good gut health.

Or my Super Seeded Sandwich Bread from the blog toasted with almond butter and banana. Always a coffee with a scoop of collagen powder and homemade cashew nut milk too!

Your go-to lunch is…

Usually a massive salad with roasted sweet potato, leftover cold meat or fish from dinner, avocado, tomato, cucumber, spinach leaves, feta, hummus, a sprinkling of seeds and some tahini & apple cider vinegar dressing.

Your go-to dinner is…

My favourites include bolognese sauce with zoodles; stir-fry chicken and veges with zoodles; a homemade curry with cauliflower rice; or baked salmon fillets with roasted veges or green salad.

Dessert or no dessert…

Has anyone ever answered no dessert to this question?! Haha. Usually just some coconut yoghurt and frozen raspberries, or a couple squares of dark 80% chocolate hits the spot.

What you reach for when a snack attack hits…

I reach for one of my Salted Caramel Cookie Dough Bites, a Sunflower Protein Ball, sugar-free paleo banana bread, an apple with almond butter or some carrot sticks with hummus.

Your fave foodie destination…

I loved Bali for all its funky raw vegan cafes and fresh fruit (but beware of the already peeled street fruit and coconut pieces. I learnt the hard way to stick to fruit that has skin and prepare it yourself. Major ‘Bali Belly’ on honeymoon!) Also you can’t beat Australia for great foodie venues. We recently went to Noosa on a ‘babymoon’ and the choice of amazing eateries was impressive.

Three foods you can’t live without…

Avocados (boo the season is ending soon!), perfectly ripe tomatoes and thick unsweetened greek yoghurt.

Your ultimate foodie indulgence…

A big slice of ginger crunch! Sounds crazy but it’s a favourite. I’ve perfected a recipe for grain-free sugar-free ginger slice that is absolutely to die for! Check it out here.

The recipe that’ll always gets you drooling is…

Cardamom and Sea Salt Ganache Tart by Sarah Wilson. The recipe is on the I Quit Sugar website and it’s a must make. So easy, so decadent.
