There’s something so intriguing about knowing the secrets of a healthy foodie. Follow along with this series where we find out what a wide range of successful health-loving ladies eat in a day.

This week we’re chatting with the amazing Lydia O’Donnell, elite marathon runner and distance running coach. With a passion for mental health, Lydia is the co-founder of a not-for-profit mental health organization called One Step. One Step is designed to raise awareness of depression and anxiety and to encourage people to run purely for the state of their own mental health.

Your go-to brekkie is…

I usually have two breakfasts. One pre run and one post run. Before training I would have two pieces of toast with honey and a coffee, and post run is ‘Proats’ – oats mixed with protein for recover, and blueberries

Your go-to lunch is…

I would usually have scrambled eggs or a salad with chicken or tuna.

Your go-to dinner is…

Dinner is my favourite meal! I have the same thing for dinner every night and never get sick of it. My partner and I call it a ‘beast bowl’ and is a bowl stacked with veges, meat and rice. I usually stick to charred broccoli and Brussel sprouts, with spinach tomato and capsicum, alongside chicken and brown rice. We top it with condiments such as hummus, or salsa!

Dessert or no dessert…

I can’t go to bed without dessert! I love Whittakers dark chocolate and black liquorice. A doughnut or The Cakers cake is a treat every now and then.

What you reach for when a snack attack hits…

Fruit! I love all fruit. So looking forward to the summer fruits!

Your fave foodie destination…

This is tough and changes all the time. My favourite café currently is Williams Eatery in Wyndham Quarters. My favourite dinner spot is Poke Poke in Takapuna

Three foods you can’t live without…

Bread!!! Eggs. And can you call coffee a food?

Your ultimate foodie indulgence…

The Caker cake!!!! 100%!

The recipe that’ll always get you drooling is…

Protein Pancakes! So easy to make but so yum! Banana, protein and eggs!
