There’s something so intriguing about knowing the secrets of a healthy foodie. Follow along with this series where we find out what a wide range of successful health-loving ladies eat in a day.

Leah is a Woman’s Functional Health Practitioner who has a big passion in supporting, educating & coaching woman in taking back control of their health, hormones and life. After going through her own experiences with hormonal imbalances from overtraining, undereating and living a stressful lifestyle, Leah has learnt first hand that there is more to health than exercise and diet alone and as woman we need to take EXTRA care in nourishing our bodies in order to thrive. Leah is the founder of Wellness Within where she works with woman on creating happy & healthy hormones by addressing the underlying root cause of hormonal imbalances in the body. She is a HUGE advocate for Women’s Health and believes that woman shouldn’t & don’t have to accept feeling suboptimal & deal with the discomfort & symptoms that hormones can bring. Your go-to brekkie is…

Ohhhh, I love breakfast, it is my favourite meal of the day! I have a few go to brekkie’s that I never really stray from. It’s either a yummy green smoothie (to support those hormones of course), which I chuck in frozen banana and zucchini, avocado, spinach, collagen, plant-based protein powder and ice because I love my smoothies nice and thick!! Or the old classic, eggs & smashed avo on yummy Vernerdi paleo bread. In the weekends when I’ve got more time, l love making some gut friendly pancakes!! Pancake Sunday is a thing in my house.

Your go-to lunch is…

I am a creature of habit! I love BIG warm hearty salads so you can pretty much guarantee that that’s what I’ll be whipping up for lunch most days!! A classic for me is spinach, green beans, broccoli, capsicum, zucchini, sweet potato or pumpkin topped with chicken or salmon & seeds – because seed cycling (an awesome and natural way to balance and support your hormones during phases of your cycle).

Your go-to dinner is…

Dinner I’m quite simple, I usually have a protein, loads of veggies & kumara fries. But if I feel like getting creative, I love a good healthy twist on some of my favourites like meatballs, nachos or pizza.

Dessert or no dessert…

Funny enough I’ve never been too much of a dessert gal, I’d rather go for an extra serving of dinner if I’m honest! But when those sweet tooth cravings do come around I’ll either go for coconut yoghurt, crushed nuts, cinnamon and berries or a slice of homemade banana bread with a generous serve of peanut butter. If I’m feeling naughty, my guilty pleasure is always a good apple pie & ice cream. This isn’t something I can eat often though as Dairy doesn’t agree with me very much & my tummy definitely lets me know about it!

What you reach for when a snack attack hits…

So I’m a big fan of the snacks.  I’ve never been one of those people who can have three big meals a day & be satisfied. I get too hangry going too long without food! My go to’s would be apple & nut butter, rice cakes & tuna, boiled eggs or my obsession, tahini and carrot sticks. Honestly, don’t mock it until you try it.

Your fave foodie destination…

I am such a big foodie, I love going out to new cafes, trying new foods and finding new favourites. In saying that I honestly don’t go out that often to eat as I always prep my food in advance, so I really only go out to eat for a girls brunch or special occasions. If I was to nail it down to a few go to’s, I know that these places never disappoint. Two Grey, Cafe Neo, Chow & or Maranui cafe.

Three foods you can’t live without…

Oh this one’s a goodie!! I’d have to say peanut butter, kumara fries & believe it or not broccoli. I know, it hard to believe but I honestly LOVE broccoli and I literally eat it everyday, twice a day!

Your ultimate foodie indulgence…

Ohhhh this one is hard. I go through so many phases, but right now I’d it would be a toss between savoury and sweet. I’m a sucker for hot chips or some homemade paleo cookies, served with hot chocolate. Yes, please!!

The recipe that’ll always get you drooling is…

Chocolate chip skillet cookies!! Only 6 ingredients! 1 large egg +1 egg yolk, ⅔ cup coconut oil, ⅔ cup coconut sugar, 2 tsp vanilla extract, 1 ¾ cup of almond meal, ½ tsp baking soda, ¼ tsp sea salt, 1 cup dark chocolate choc chips, top with coconut yoghurt or coconut vanilla ice cream!! It’s a very dense dessert so you don’t need much to be satisfied.
