This week we chat to the gorgeous Lauren Glucina, face behind one of our fave foodie blogs Ascension Kitchen and founder of LIVELY Desserts.
Lauren is a qualified naturopath, medical herbalist, nutritionist and entrepreneur, passionate about food as medicine. Lauren loves inspiring people to embrace more plant-based wholefoods into their daily diets, as no matter what style of eating one embraces, we can all do with more plants! Your go-to brekkie is…
Either a bowl of oats topped with berries, flaxseeds, walnuts, ginger powder, a drizzle of coconut yoghurt and a simple hemp protein shake (got to get that protein in!); or a smoothie packed with various goodies (greens, turmeric, maca, cacao, blueberries, banana and zucchini – strange but true!). Lately I’ve also been taking a liquid herbal formula I made myself for stress support. It’s a blend of green oats, schisandra berry and rhodiola.
Your go-to lunch is…
I’ve been making a seed bread weekly packed full of sunflower/pumpkin/sesame seeds, sprouted buckwheat, goji berries, a dash of tamari and the tiniest drizzle of pure maple syrup. It’s fab toasted up with homemade hummus, avocado, rocket and a side of kraut. Great for those sensitive to sugars and starches like myself!
I try and get a serve of cruciferous vegetables in daily (for healthy liver and hormones), a big helping of greens and some sort of plant protein. A typical night would be cauliflower florets roasted with olive oil, chilli flakes and cumin, tossed with shallots and fennel, salad from the garden (watercress, rocket, spinach) with avocado, chia seeds, a sprinkle of karengo fronds and a mustard-apple-cider-olive-oil dressing, red lentil mash and a heap of fresh lemon zest and chopped herbs on top. Need you ask?! Obviously, a slice of my new LIVELY™ Desserts. The Banana Cacao is my current favourite, which is a bit like a healthy Perky Nana… So good!
What you reach for when a snack attack hits…
I drink a lot of herbal tea and love the Puraty Energy Booster (sencha green tea, ginkgo, licorice, ginseng, tribulus and spearmint). I also love a quality dark chocolate, fresh chopped vegetables with a homemade spread or an Apricot Oat Cookie (which are quick as a flash to make, love ‘em).
Your fave foodie destination…
Melbourne… The markets, the cafés, everything! Lucky I have a sister there!
Three foods you can’t live without…
Only three? Chocolate, avocado, hummus! Or chocolate avocado mousse, or chocolate hummus… Any combo of the three! I’m also partial to a really strong, bitter green juice with lemon, just to balance the aforementioned out!
Your ultimate foodie indulgence…
I can’t go past a good grounding bowl of Kitchari.
The recipe that’ll always get you drooling is…
Butternut Squash Black Bean Tacos. There are so many components to pull together so it is definitely a lazy Sunday kinda meal, but absolutely worth it, particularly when generous dollops of nori guacamole and raw cashew aioli are involved!
