There’s something so intriguing about knowing the secrets of a healthy foodie. Follow along with this series where we find out what a wide range of successful health-loving ladies eat in a day.

This week we’re honoured to have the gorgeous foodie Kelly Gibney share her day on a plate with us…

Kelly Gibney is a wholefood writer, food photographer and mother (of 2 gorgeous girls) based in Auckland. She writes a weekly column for Dish Magazine called ‘Green Mondays’ and published her debut cookbook earlier this year. Her approach to cooking embraces simplicity, seasonality and big, delicious flavours.

  1. Your go-to brekkie is…

I’m not much of a breakfast eater. I prefer to enjoy a big mug of matcha with coconut milk (weekdays) or a coffee with cream (weekends) and then eat later. In the last 2 months I’ve halved my coffee consumption and I’m calmer and more efficient because of it. I love the flavour and savour it when I have it on weekends.

  1. Your go-to lunch is…

I’m lucky that working form home means I can cook a hot lunch for myself. I eat a lot of eggy lunches. Softly scrambled eggs with miso toast and smoked salmon or sauteed broccoli / kale, fried eggs and avocado. I like to eat a substantial meal in the middle of the day. I spend a lot of my days recipe testing so this is often eaten standing at the kitchen bench unfortunately. I know I should sit down and enjoy the meal properly but I get work done while the baby sleeps so there’s no time to waste!

  1. Your go-to dinner is…

It’s hard to pick just one! I love Asian flavours so you’ll often find us eating really fragrant, spicy dishes; Asian steamed fish parcels, spicy noodles dishes, curries etc. We also love Mexican, especially coming into summer. Lots of great big salads too.

Dessert or no dessert…

I don’t have a big sweet tooth (more of a salty / savoury person) but I do like a bite of something after a meal. Somehow it feels more complete that way. It’s usually a square of homemade raw chocolate or some fresh berries with a little organic cream.

  1. What you reach for when a snack attack hits…

I’ll often have a mug of bone broth in between meals, roasted nuts or wedges of strong cheddar cheese with granny smith apples.

Your fave foodie destination…

New York is an amazing place to eat. Everything is there. Whether you want healthy food, international flavours or something fancy – whatever you heart desires. Plus the service is knowledgeable and sassy. I just love it.

  1. Three foods you can’t live without…

Salt, lemons and fresh herbs. The addition of these 3 ingredients instantly elevate any dish.

  1. Your ultimate foodie indulgence…

A long meal at a great restaurant, good service, excellent wine, possibly some oysters. I adore dining out.

The recipe that’ll always get you drooling is…

Depends on the season but it’s currently this salad!
