We’re obsessed with hearing about what other people eat all day erryday and we just know that you’re all as curious as we are! There’s something so intriguing about knowing the secrets of a healthy foodie. Follow along with this series where we find out what a wide range of successful health-loving ladies eat in a day.

This week we chat with the beautiful Erin O’Hara, founder of Golden Yogi, a stunning yoga studio nestled in Takapuna, Auckland.

Erin O'HaraErin has always had an interest in health and wellness with her main focus on the mind, body and soul connection. She has studied science, natural medicine and yoga in order to treat individuals holistically to allow them to put their best foot forward in life, bringing them into a place of optimal health and happiness. Over the last decade, Erin has accumulated a wealth of knowledge through not only her studies and working with clients, but also through her personal experience of health through racing as a professional triathlete for many years, as well as through her own experience of illness as a teenager.

“I have Celiac Disease so everything needs to be 100% gluten free. I love simple nutritious homemade food that I can make in less than 20 minutes. I am also vegetarian so I try to eat lots of plant-based proteins like beans, lentils, chickpeas, nuts, seeds, tofu and tempeh.”

Your go-to brekkie is…

Sometimes I am known to eat my lunch for breakfast… Weird I know! I always crave greens at breakfast time, so I have either sautéed vegetables with eggs or tofu scramble, leftover vegetables, or a green smoothie!

Green SmoothieYour go-to lunch is…

Usually dinner leftovers or lunch that I’ve made while I am cooking dinner. A yummy BIG salad (like a whole bag full of greens kinda big!), leftover stir-fry or roasted vegetables.

Your go-to dinner is…

Summer – big yummy healthy salad. My favourite at the moment is cucumber, tomatoes, avocado, olives, fresh corn cut off the cob and homemade dressing (apple cider vinegar, olive oil, salt and pepper). Otherwise stir-fries with lots of vegetables, grated turmeric and tamari.

Dessert or no dessert…

No dessert. Or if I have an early dinner then maybe a piece of fruit or a few nuts. I don’t really have a sweet tooth so I don’t feel like I’m missing out when it comes to treats.

What you reach for when a snack attack hits…

Nuts, fresh fruit, bliss balls or Nutrition By Nature kefir water!

Your fave foodie destination…

Mimosa in Takapuna, Little Bird, Sip Kitchen or The Butcher’s Son are my favourites. All have lots of gluten-free and vegetarian-friendly options.

The recipe that’ll always get you drooling is…

I am terrible with following recipe books! Instead I love to create in the kitchen. I love simple food and lots of vegetables… Salads, salads, salads I love!! My favourite is Tasman Bay Salad Daze Mix; it has mint leaves (yum!), tomatoes, avocado, sunflower seeds, chickpeas and homemade hummus or dressing.
