Emily Hope

We’re obsessed with hearing about what other people eat all day everyday and we just know that you’re all as curious as we are! There’s something so intriguing about knowing the secrets of a healthy foodie. Follow along with this series where we find out what a wide range of successful health-loving ladies eat in a day.

A mum, NZ Registered nutritionist, family fig and feijoa orchard manager come Autumn and a lover of all things food and nature. Emily adores seasonal produce, olive oil, lemons, red wine and dark chocolate. Most probably in that order amongst ocean swimming, bush walking and watching the sun down…she lives in Marlborough on her family’s property with her husband, two young children and black Labrador Hank.

Your go-to brekkie is…

Homemade brown rice sourdough toasted and topped with butter, Pic’s peanut butter, hemp hearts, coarse sea salt alongside an expresso stirred with a dollop of coconut cream.

Your go-to lunch is…

Normally leftovers or bit and bobs from the fridge made into a nourish bowl. Things like cooked brown rice, leftover roasted kumara, garden greens and herbs alongside a fried free-range egg or some locally made tempeh. Always topped with nuts or seeds, coarse sea salt and a generous drizzle of extra virgin olive oil. It’s a totally delicious way to eat because the ingredients vary and nothing ever gets wasted! Frugal and nourishing.

Your go-to dinner is…

Eaten anyway from 4.45pm! In this season of life with a very young family we have chosen to eat with the children (even though it’s really early!). We normally enjoy family-friendly dinners such as risotto made with homemade chicken stock, tuna pesto pasta with hidden greens and wild sausages served with homemade wedges and a hearty green salad. Another favourite is free-range roasted chicken with roasted vegetables and raw rainbow vegetables because my daughter Isabella loves them!

Dessert or no dessert…

Dessert. Absolutely! Normally 4 squares of dark chocolate or a slice of homemade cake. Eating early means I always feel like a pre-bed snack!

What you reach for when a snack attack hits…

A wedge of Parmesan cheese plus an apple, a banana, carob and hemp smoothie or a bowl of chia pudding topped with fruit and nuts/seeds.

I always try to choose a balanced snack containing colour (in the form of fruit or vegetables), protein and healthy fats to keep me going for a number of hours. With two young children, it’s easy to get distracted and forget to eat!

Your fave foodie destination…

Without a doubt…Italy. The most abundant seasonal fruit and vegetables, coffee, parmesan, olive oil, gelato…what more could you want?!

Three foods you can’t live without…

My morning expresso, sourdough, olive oil…can I add more two more…lemons and dark chocolate!

Your ultimate foodie indulgence…

Most dreamy would be a really simple supper of seasonal produce and freshly caught fish, enjoyed alfresco while watching the sunset over glass of wine with family and friends. If there was an ocean view, that would be perfection.

The recipe that’ll always get you drooling is…

A delicious cake such as a mascarpone topped lemon cake or a ganache smothered chocolate cake. I’m also a fan of bright beautiful salads brimming with colour and topped with crunch and any recipes containing figs always catch my eye and make me dream of Autumn fruit!
