Dr Rosie Bosworth

We’re obsessed with hearing about what other people eat all day erryday and we just know that you’re all as curious as we are! There’s something so intriguing about knowing the secrets of a healthy foodie. Follow along with this series where we find out what a wide range of successful health-loving ladies eat in a day.

This week we chat to Dr Rosie Bosworth, an expert in the area of the global future of foods.

Based between New Zealand and Silicon Valley, Dr Rosie Bosworth is a global future of foods expert, communications specialist and venture partner at Aera VC with an appetite for finding ways to improve sustainability and resilience for agricultural and food systems.  Rosie’s work focuses on the intersection of technologies, science and biotech on the future of global food production where she carries specialist insight into alternative protein systems, plant based proteins, cellular agriculture, synthetic biology and controlled environment (indoor) farming.

 Rosie advises businesses, government and industry on the future of food and agricultural systems, and  is a regular keynote speaker, journalist and thought leader in future food system. 

 Rosie holds a PhD from the University of Auckland and was recently nominated as one of New Zealand’s 40 Under 40 in the Influencer & Disruptor category. She also teaches Vinyasa yoga at her local studio – the Yoga Sanctuary, Mairangi Bay.

  1. Your go-to brekkie is…

I have many depending on my mood or the weather! I love porridge cooked with berry, bananas and loads of cinnamon topped with thick greek coconut yoghurt and berry coulis. Otherwise home made banana bread or a green berry protein smoothie if I’m on the run. All served with coffee, of course 😉

Your go-to lunch is…

Avocado, vegemite and tomato on toasted vogels or poached eggs on toast. Or a massive salad with tonnes of roasted seeds, nuts and a protein of choice.

Your go-to dinner is…

Ask me and I’ll say pan fried salmon with roasted kumara and sautéed vegetables. Ask my mum and she’ll say stirfry 😉

Dessert or no dessert…

I’m definitely a dessert girl. My sweet tooth is pretty out of control – if I haven’t reached for the chocolate by 10am, there’s something wrong with me. My mum says if you don’t like dessert, there’s something wrong with you!

What you reach for when a snack attack hits…

Dark chocolate, bliss balls and nuts (roasted pecans, walnuts, brazils and almonds are my favourites). I have a slight obsession with these, (which I’m considering hypnotherapy to help me get over), and I carry them everywhere. I try to make my own mint cacao coconut bliss balls – but I started to eat about a week’s supply in one hit, so now I buy the Tom and Luke’s ones to learn how to ration a bit.

Your fave foodie destination…

Asia. Vietnam has really delicious eats and I tried some incredible foods during a few cooking courses I did there a few years back. I also love  Bali for its mix of traditional Asian style street eats and then its amazing selection of delicious fresh vegan options.

Three foods you can’t live without…

Bliss balls, bananas and dark chocolate.

Your ultimate foodie indulgence…

I am pretty lax with my food rules, so I don’t really consider any food an indulgence . If I crave it, it typically goes in my belly. However, NZ’s My Darling Lemon Thyme’s rich flourless dark chocolate wedding cake I’ve made for several of my good friends’ weddings and birthday celebrations is perhaps the most yummy chocolate dessert I eat. It far surpasses anything I’ve tried on any of my travel adventures. My Darling Lemon time has inspired many of my dishes over the years.

The recipe that’ll always get you drooling is…

My infamous feijoa, white chocolate and coconut cake. I made the recipe up about 15 years ago and it is just so delicious, now I bake it routinely on request for birthdays etc. I use about 20 feijoas (with their skin on in each) so I am stoked it’s the season now as I’ll be making a tonne of them. I make sure to freeze feijoas each season so I can keep baking them all year round too.
