We’re obsessed with hearing about what other people eat all day everyday and we just know that you’re all as curious as we are! There’s something so intriguing about knowing the secrets of a healthy foodie. Follow along with this series where we find out what a wide range of successful health-loving ladies eat in a day.

This week we chat with the lovely Danielle Esplin, Marketing Manager at the amazing NZ company Barker’s of Geraldine. Here Danielle recalls what led her on her career journey…

 

I recall the day I decided I wanted to become a marketer… 15 years old, at the photocopier working as a ‘Girl Friday’ and I was really impressed with the new Honda Accord keys I saw the Brand Management team receiving.  I never got that Honda Accord (thank goodness?!), but when I ‘made it’, I re-named my team to a more relevant ‘colouring in’ department.  Now, I like to think of ourselves as the ‘story tellers’.  Makes us sound like a bunch of purple gowned wizards with crazy hair, but many of us can’t resist a good captivating story – with spades of honesty and integrity, which delivers a feel good moment in our busy lives.  That’s why I love what I do!

Your go-to brekkie is…

Depends whether I’m being good or bad… or running late.  So in that order; Smoothie on a good day, A piece of home baking on a bad day or nothing if I’m running late!

Your go-to lunch is…

Love sushi, a salad from Tank or a poke bowl.

Your go-to dinner is…

Salmon fillets with Barker’s Peach & Mango chutney on top and baked.  Or if I don’t have time, fresh salmon (sashimi style) which I slice and dip into Barker’s Miso & Ginger Dressing.  If I have leftover’s I love ‘bowl style’ eating… Fresh.  Simple. Quick!

Dessert or no dessert…

Dessert – of course!

What you reach for when a snack attack hits…

Roasted almonds.

Your fave foodie destination…

Anywhere that uses fresh ingredients… I like it simple but always with a glass of wine.  Most recent favourite foodie moment was at a friends bach in Matarangi, outside with oysters and blue cod and a banging Pinot Gris eating with loved ones.

Three foods you can’t live without…

Cheese, Tomatoes, Barker’s Miso & Ginger Dressing.

Your ultimate foodie indulgence…

Three courses; fresh oysters with warm ciabatta and butter, Wagyu steak with insalate caprese on the side, finished with a cheese board and a perfect wine match with every course.  Completed with a shot of Lemoncello.

The recipe that’ll always get you drooling is…

A classic self saucing chocolate pudding with vanilla ice cream.
